Easy Homemade Cinnamon Rolls Without Yeast

This is a wonderful recipe I picked up on my tour of the Mum's recipe box.

PREP: 30 MINUTES

 COOK: 30 MINUTES

 YIELD: 9 SERVINGS

INGREDIENTS

FOR THE DOUGH:

2 cups all-purpose flour, plus more for rolling out dough
2 1/4 teaspoons baking powder
3 Tablespoons white sugar
1/2 teaspoon ground cinnamon
1/2 teaspoon kosher salt
3/4 cup whole milk
3 Tablespoons unsalted butter, plus more for greasing baking dish

FOR THE FILLING:

1/2 cup packed light brown sugar
2 1/2 teaspoons ground cinnamon
1 Tablespoon unsalted butter, melted

FOR THE FROSTING:

4 oz. cream cheese, at room temp
4 Tablespoons unsalted butter, at room temp
1 teaspoon vanilla extract
3/4 cup confectioners' sugar, sifted

METHOD:

MAKE THE DOUGH AND FILLING:

In a large bowl, whisk together the flour, baking powder, sugar, cinnamon and salt.
In a small saucepan set over low heat, combine the milk and butter. Cook just until the butter is melted. (Alternately, microwave the milk and butter together. See Notes.)
Add the milk mixture to the flour, and using a spatula, mix just until combined.
Flour your work surface then turn out the dough and knead it for 1 minute until it comes together in a smooth ball. If the dough feels overly sticky, add more flour as needed, but do not over-knead the dough.
Cover the dough loosely with a damp towel and let it rest for 15 minutes.
Preheat the oven to 350°F. Grease an 8- or 9-inch baking dish with butter.
Lightly flour your work surface then roll the dough into a 10x14-inch rectangle.
In a small bowl, whisk together the brown sugar and cinnamon.
Brush the dough all over with the melted butter then sprinkle the cinnamon-sugar mixture on top.
Beginning at the long end, tightly roll the dough up into a log. Trim off the edges then slice the log into 9 rolls.
Arrange the rolls in the greased baking dish.
Bake the rolls for 25 to 30 minutes until they are pale golden and baked through. While the rolls are baking, make the frosting.

MAKE THE FROSTING:

In a large mixing bowl, combine the cream cheese and butter. Using a handheld mixer, beat the ingredients until smooth then add the vanilla and beat just until combined.
Add the confectioners’ sugar and beat just until combined.
Remove the rolls from the oven and let them cool completely before frosting and serving.

NOTES:

The milk and butter must be melted together. Using cold milk causes the melted butter to solidify, which leads to an uneven dough.

Apple Cinnamon Loaf


Apple Cinnamon Loaf Cake

This is a cake that is quick and easy to make for any time. My Grandfather made this loaf a family favourite. Great served with a scoop of ice cream for a summertime tea.

Ingredients:

1/3 cup brown sugar (not packed)
1 tsp ground cinnamon
2/3 cup white sugar
½ cup butter (margarine), softened
2 eggs
1 ½ tsp vanilla extract
1 ½ cups flour
1 ¾ tsp baking powder
½ cup milk
1 apple, peeled and chopped

Method:

Preheat over to 180*C (350*F).
Grease and flour 9 x 5-inch loaf pan.
Mix brown sugar and cinnamon in a small bowl, set aside.
Using a mixer, beat white sugar and butter together until smooth and creamy. Beat in eggs, 1 at a time, until incorporated. Add vanilla extract.
Combine flour and baking powder together in another bowl. Mix into creamed mixture a bit at a time until mixed. Add milk, mix until smooth.

Pour half the batter into prepared pan. Add apple pieces and cinnamon mixture on batter. Lightly press apples into batter.
Pour the remaining batter over apples, top with remaining apple pieces and cinnamon mixture.
Lightly pat the apples into the batter using a spoon.


Bake in preheated oven until toothpick comes out of loaf cleanly, 30 – 40 minutes.

Traditional Meatloaf



Traditional Meatloaf


This meatloaf was always a family favourite, and we always hoped there was leftovers for sandwiches the next day.

Prep Time: 15 minutes
Baking Time: 1 ½ hours
Makes: 8 servings

Ingredients:

2 eggs
¼ cup ketchup
2 tbsp. brown sugar
1 tbsp. regular prepared mustard
1 tsp. basil
½ tsp. salt
¼ tsp. freshly ground black pepper
2 lbs. (1 kg) medium ground beef
¾ cup fine dry breadcrumbs
1 small onion, finely chopped

Method:

1. Preheat oven to 180*C (350*F). Grease a 9x5x3-inch loaf pan. Line bottom with waxed paper.
2. In a large bowl, whisk eggs with ketchup, sugar, mustard, and seasonings. Add meat. Sprinkle with breadcrumbs and onion. Work with your hands or a fork until evenly blended.
3. Press into prepared pan. Lay a sheet of foil loosely over the top. Bake in centre of preheated oven for 1 hour. Uncover and drain off fat. Cover top with ketchup and continue to bake, uncovered, for 30 more minutes. Let stand 5 minutes.
4. Serve immediately.


This recipe freezes well in airtight container.

Fudge



Fudge


Ingredients:

1 1/2 c. sugar
2/3 c. carnation milk
2 T. butter
1/4 t. salt
2 c. mini marshmallows (or regular)
1 1/2 c. semi-sweet chocolate chips (Options: butterscotch, caramel, peanut butter or whatever you have)
1/2 c. chopped walnuts (optional)
1 t. vanilla extract.

Method:

1.Line 8" sq. pan with foil.
2.Combine sugar, milk, butter & salt in a med. saucepan. Bring to a rolling boil over med. heat for 5 min. Remove from heat ( I turn the burner down, makes it easier to melt everything).
3.Stir in marshmallows, c. chips, nuts & vanilla. Stir until they all melt.
4.Pour into pan; refrigerate for 2 hrs. Lift foil from pan, remove foil, cut into squares.

Old Fashioned Raisin Squares


Ingredients:

1 ¼ c. flour
1 tsp. baking soda
1 tsp. cinnamon
½ tsp. nutmeg
½ tsp. allspice
¼ tsp. cloves
1 c. raisins
½ c. shortening (lard)
1 c. sugar
1 egg, beaten

Method:

Grease a 9” x 13” pan.

Sift together flour, baking soda, cinnamon, nutmeg, allspice, cloves and ¼ tsp. salt.

In saucepan combine raisins and 1 c. water. Bring to boil, remove from heat and stir in  shortening.

Combine raisin mixture, sugar and egg, well beaten.

Add dry ingredients to raisin mixture and mix until well blended.

Turn into greased baking dish. Bake at 190*C (375*F) for 12 – 15 minutes.

Makes 24 squares

Oven Chinese Rice


Oven Chinese Rice



This rice dish is so easy and filling. Experiment with whatever vegetables you may like to include, and it is an excellent side dish to the Sweet and Sour Peachy Chicken.

Ingredients:


2 c. long grain rice
1 pkg. Onion Soup Mix or (my recipe for homemade Onion Soup mix below)
1 chopped onion
1/3 c. Soy Sauce
3 1/3 c. Water
1/3 c. Oil (Sunflower)

Method:

Put all dry ingredients in 2-qt. oven proof dish


Add water, oil and soy sauce.


Mix, place lid on and put in 180*C (350*F)oven for 1 ¼ hours. If a bit wet just add up to 10 more minutes to cooking time.
Stir and serve



*For a change and to add colour, you also add 1 c. frozen/canned corn, or whatever vegetable you like.

Mix together and add to rice.
1 tsp parsley flakes
1/2 tsp onion powder
1/2 tsp turmeric
1/4 tsp celery salt
1/4 tsp sea salt
1/4 tsp sugar
1/8 tsp pepper

Mum's Lasagna


Mum's Lasagna


My Mum made this recipe for as long as I can remember. It was a favourite in our family for Birthdays, Anniversaries, and any other special occasion. 

Utensils Required:

Frying Pan
2 Bowls for jar sauce
Large bowl for grated cheese
Medium bowl for cottage cheese and egg mixture
9” x 13” Baking Pan
Measuring Spoons
Wooden Spoon
Paring Knife

Ingredients:

Lasagna Noodles - Oven Ready or Original to cook ahead of time.
1 lb. Mince
½ tsp Garlic Powder
1 Onion, chopped
½ tsp. Onion Powder
1 tsp. Worcestershire Sauce
1 large jar/can Pasta Sauce
2 Eggs
1 c. Cottage Cheese
Salt & Pepper to taste
Mild Cheddar Cheese
Parmesan Cheese, as much as desired

Method:

1. Separate pasta sauce in 2 bowls 1/2 c. in one and 1/2 c. in second bowl. Keep remaining sauce to add to meat when cooked.
2. In large frying pan, brown mince with Worcestershire Sauce, garlic powder, onion powder, chopped onion. Once browned, mix in pasta sauce, left in jar/can.
3. In separate bowl mix eggs and cottage cheese with salt and pepper to taste. Set aside.
4. Shred cheese, enough to cover 2 layers.
5. Cook noodles, if using regular or homemade noodles.
6. Put lasagna together in following order


Spread ¼ c. Sauce in baking pan




Place Noodles ¼-inch apart




Cover noodles with half of the Cottage Cheese mixture




Spread half meat mixture over cottage cheese




Place 1/2 shredded cheese  over meat mixture




Place noodles ¼ -inch apart




Cover noodles with remaining cottage cheese mixture




Spread remaining meat sauce mixture over cottage cheese mixture



Cover meat sauce mixture with remailing shredded cheese




Place noodles ¼ -inch apart




Spread reserved 1/2 c. pasta sauce over noodles




Sprinkle entire top with grated Parmesan Cheese






Place in oven at 180*C (350*F)
Cook for 40 – 45 minutes
